Joshua Wolcott
Growing up in Wyoming County, the heart of New York’s dairy & farming industry, Josh has a real appreciation for fresh food products. His family’s restaurants and their farms sparked a passion for carefully choosing sources of food. Josh’s dedication to sourcing and using the best fresh and local products is evident in his cooking.
Josh went to culinary school at Johnson & Wales University in North Miami, after graduating from Perry High School in 2006. He took the skills he learned from working in his family and other local restaurants and continued to develop them at J&W.
After culinary school, Josh came back to Western New York and opened a catering business, and he worked as a bartender and sous chef in a couple of local restaurants. He also opened a music store and started a band with his brother.
Josh is also a musician, playing guitar and keys as well as providing vocals in a local band, Rhythm Collision.

In 2014, Josh moved to Knoxville, Tennessee and became the Executive Chef at a downtown hotel that was owned by Peyton Manning. From there he went on tour with the rock band, Van Halen as the tour chef, as well as working for several other bands. Traveling around the country cooking for musicians combined his passion for music and food. In 2016, Josh started working for Latina Boulevard Foods, learning the wholesale distribution side of the restaurant business, as well as continuing to operate Old Souls Catering.
